Ever roasted a whole chicken in your toaster oven, on your boat? NO!? I have! Try it out and then make this delish buffalo chicken dip.

Prep Time: 20 minutes | Cook Time: 1.5 hrs | Total Time: 2 hrs

Here is what you'll need...

  • whole chicken ~ 5 pounds (rotisserie chicken if your in a rush!)

    • you will only need about 2 cups total of the chicken

  • 1 block cream cheese - room temp

  • 1- 2 cups of shredded cheese - there is no right type! use a combination

    • cheddar

    • mozz

    • parmesan

    • your favorite

  • 1 jar buffalo sauce - i use primal kitchen dressing

    • alternative is a 1/2 bottle of franks red hot (use the whole bottle if you like the dip to have more spice)

  • 1/4 - 1/2 cup ranch dressing - i use primal kitchen dressing (optional)

  • 1 tbs garlic powder

  • salt & pepper

  • 1 tbs paprika (optional if you want more spice)

  • olive oil

  • oven safe pan

  • ziplock baggy

Here is what you'll do...

  1. (If using a rotisserie chicken skip this step.) Pre-heat oven to 400º. Prep chicken by patting it down with paper towel so it is mostly dry, drizzle olive oil, sprinkle salt & pepper, and rub all over the chicken. Bake for about 1 hour or until chicken temp is 165º. Once complete, let chicken cool and start peeling apart!

  2. Gather the rest of your ingredients. Make sure your chicken is peeled apart into bite size pieces. I use a cheese grader to shred the big pieces!

  3. Place all your shredded cheese in a bowl.

  4. Place cream cheese in pan. (Cut it up into small pieces and scatter around the pan.)

  5. Place chicken, buffalo sauce & ranch dressing in a ziplock baggy. Shake!

  6. Dump ziplock baggy contents over cream cheese and mix. Add about 3/4 of your cheese and mix. Then add the rest of the cheese on top.

  7. Bake for about 12 minutes. Mix the dip again and bake for about 5 more minutes. Broil for 2 minutes if you'd like!

  8. Let cool and enjoy with veggies and chips!
