GF Banana Pumpkin Bread
Updated: 2 days ago
I was bored on day 5 of traveling on our boat from CT to SC. We are hanging out in VA until the strong winds pass. I don't have a lot of ingredients on the boat and not within walking distance to the grocery store. So, after about an hour of research and what items can be replaced I landed on banana pumpkin bread! You won't regret making this at home.
Prep Time: 10 minutes | Cook Time: 45 min-1 hr | Total Time: 1 hr 10 min
Here's what you'll need...
Dry Ingredients
2 cups flour (I use 1:1 with xanthum gum)
1 1/2 tsp baking powder
1 tsp pumpkin pie spice
1/2 tsp baking soda
Wet Ingredients
1 ripe banana
1/2 cup maple syrup
1 cup pumpkin puree
1/3 cup olive oil
1/4 cup oat milk
1 tsp vanilla
chocolate chips
2 mixing bowls
spatula
bread pan

Here's what you'll do...
Pre-heat oven to 350º and oil the bread pan.
Gather ingredients. Add all dry ingredients in one mixing bowl.
Add banana and pumpkin in a different bowl and smash till banana is mush. Then add the rest of wet ingredients.
Add all dry ingredients into the bowl with wet ingredients. Mix until well combined, be sure not to over mix.
Pour batter into bread pan and smooth over so batter is even. Sprinkle chocolate chips on top.
Bake for 40 minutes. But up to an hour! Stick bread with toothpick to ensure its done!
