
Frozen Breakfast Burrito!? - GF & V option!

Do ever crave a breakfast burrito at work? I do! Try this recipe for a delishhh burrito on the go with the perk of being packed with protein!
Here is what you'll need...
12 wraps - This is where the gluten free comes in. I use gluten free wraps!
1/2 pound ground meat - I use bison. Leave this out if you're vegetarian.
6 eggs
1/4 - 1/2 cup milk
1 bag Mexican blend shredded cheese
1 can black beans
1 chopped pepper - any color! *optional
1/2 chopped onion *optional
1/2 cup salsa - I use Newmans own peach salsa.
Spices - all optional of course!
cayenne pepper
salt & pepper
paprika
chili powder
garlic salt
cast iron pan
spatula
medium or large bowl
spoon
plastic wrap
Here is what you'll do...
If you are adding onion and pepper, dice and chop these up and set aside.
Cook ground meet in cast iron and add any spices you want. Once fully cooked, pour ground meat into bowl.
While the cast iron is still hot crack 6 eggs, add milk. Scramble! Once eggs are fully cooked, pour eggs into bowl. Add black beans in bowl. Mix up!
Add onion, pepper, salsa, and about 3/4 bag of shredded cheese. Mix up!
Grab your wraps and scoop about 3/4 cup on each wrap. Not too much where you can't wrap the burrito up. Sprinkle some extra cheese on top of the mixture and wrap it up!
Wrap each burrito in plastic wrap and place them in the freezer.
When you are ready to absolutely delete one of these delicious burritos you have two options...
Take a burrito or 2, no judgement out and let thaw. Once thawed bake in toaster oven for about 3 minutes or microwave for 2 minutes
If you're impatient like me, place the frozen burrito in the toaster oven for about 6 minutes or microwave for 4.
*times aren't exact! You may have to adjust for your toaster oven or microwave.
