Easy Egg Scramble - GF

Need an easy breakfast with some extra protein? I've got just the meal!

This recipe should take about 15 minutes of your time.

While this recipe is naturally gluten free, it can also be made dairy free with a couple substitutions! And if you're looking for a vegetarian recipe simply swap out the susage for beans or tofu. 😊


Here is what you'll need...

  • 2 eggs

  • 1 tbsp of milk, dairy or dairy free (if using heavy cream us slightly less than 1 tbsp)

  • 1-2 links of of breakfast meat (i used chicken sausage)

  • 4 cherry tomatoes

  • 1 tbsp chopped onion

  • 2 tbsp cheddar cheese (use you favorite dairy free substitute)

  • 1/4 cup of greens; spinach, kale, etc (i used beat greens)

  • pinch of salt & pepper

  • 1 tsp butter (or olive oil for dairy free)

  • cooking pan

  • spatula

  • cutting board

  • knife

  • small bowl


*Add or subtract my portion suggestions. Add more or less veggie/meat options depending on your needs and desires!


Here is what you'll do...

  1. Gather ingredients and materials.

  2. Dice breakfast meat into bite size pieces, chop onion, tomatoes, and greens. Shred cheese, if needed. Set aside.

  3. Crack both eggs in small bowl, add milk, salt & pepper. Mix and set aside.

  4. Heat pan on low to medium heat and add butter or olive oil. Once the butter or olive oil is warm add in the egg mixture, all veggies, meat, and half the cheese.

  5. Scramble the eggs and veggies around!

  6. Cook till eggs and meat are cooked through. (about 7-8 minutes)

  7. Once scramble is cooked through add the rest of shredded cheese on top and ENJOY!
