Wednesday Night Salad

Need an easy yet nutritious and tasty salad with a twist? Not every salad has to be the same, change it up and try my Italian salad inspired recipe!
Here's what you'll need...
2 mini cucumbers
1/2 cup cherry tomatos
pepperoni (i used soppressata)
cheddar cheese (i used jasper hill farm Vault 5 or any cabot cheddar cheese)
2 small breasts of shredded chicken
1 can sliced black olives
1 container of greens. Use your favorite! I used AeroFarms micro rainbow mix.

Here's what you'll do...
If not already cooked, bake chicken and shred or cut into small pieces after it cools. (I bake chicken at 375º for about 8 minutes then flip the chicken and bake for about 8 more minutes. Tips for the chicken... marinate the chicken a few hours prior with the Italian dressing. Or just bake with salt & pepper!) Set chicken aside when done.
Slice cucumbers, chop tomatoes in half, cut cheese and pepperoni into bite sized pieces. Use as much or as little of each ingredient as you'd like in your salad!
Place all ingredients in a bowl & toss around!
Top with Italian dressing and enjoy!
